1. When emailing into Evernote, can you organize your Note from the get go--specify the Notebook it needs to go to or assign tags?
No, you will have to properly “file” your Note only once it’s already in Evernote.
Only on Evernote Desktop version.
Yes, you can certainly do that. You’ll need to add the “@” to specify the name of the Notebook and add “#” before the name of the tag.
2. What will happen if you forward into Evernote an email with the subject line that contains a Notebook name or tag that doesn't exist?
Evernote will prompt you a message that those Notebook name or tag don’t exist.
If you mistype either the Notebook name or tags, then they will remain in the Note title after it’s imported. The Note will be created in your Default Notebook.
Evernote will create a new Notebook name or Tag.
3. Is there a way to forward emails into Evernote if you are on Evernote Basic?
No, you have to upgrade.
You have to be at least on Evernote Premium to be able to forward emails into Evernote.
Emailing into Evernote is a premium feature, but you can still send emails into Evernote even if you are on a free version by using tools like IFTTT or Zapier
