1. Does Evernote have a built-in structure for your Notebooks?
Yes. But you need to specify if you want to use the built-in structure when you create your account.
If you upgrade to paid version, Evernote will provide you with a Notebook structure you can follow.
No, it doesn’t. You’ve got to organize your Notebooks yourself.
2. Can you create Stacks within Stacks?
No. Notebooks in stacks can be stacked only one level deep (meaning you can have notebooks in stacks but not stacks in stacks).
3. Are you stuck with a Notebook structure once you create it?
Yes. So, you’ve got to be very careful when creating your Notebook structure.
You are never stuck with a Notebook structure. If you want to reorganize your Notebooks, delete existing Stacks to “release” your Notebooks and create different Stacks.
You will be able to reorganize Notebooks in Stacks, but you won’t be able to move Notes from one Notebook to another.
